All-purpose pizza sauce with anchovy, garlic, and San Marzano tomatoes — makes about 3 cups.

🥘 Ingredients

  • olive oil
    3 tbsp
  • anchovy fillets (they melt into the oil for savoriness, not a fishy taste)

    4 cloves
  • fresh oregano (chopped)
    2 tbsp
  • whole peeled San Marzano tomatoes (1 can)
    28 oz
  • red pepper flakes (or to taste)
    1/4 tsp
  • dried oregano
    1/4 tsp
  • sugar
    1/2 tsp
  • salt
  • black pepper
  • baking soda

    Heat olive oil in a saucepan over medium-low heat. Add anchovy fillets and cook, stirring often, until they begin to sizzle and melt, about ⏱️ 1 minute .

    Stir in garlic and cook until fragrant, about ⏱️ 1 minute . Add fresh oregano , reduce heat to low, and cook until wilted, about ⏱️ 2-3 minutes .

    Crush whole peeled San Marzano tomatoes by hand into a rough puree. Add to the pan with red pepper flakes and dried oregano . Bring to a simmer over medium heat.

    Season with sugar , salt , and black pepper to taste. Reduce heat to low and simmer, stirring occasionally, until thickened and oil rises to the top, about ⏱️ 35-40 minutes . Do not skim the oil.

    Stir in a very small pinch of baking soda until incorporated. Use on pizza, or cool and refrigerate.
